Smalhans invited the champion of Sunday Roast himself; Solfinn Danielsen. Better known as half of pop-up restaurant Rødder and the wine shop Rødder & Vin in Copenhagen. For the occasion he teamed up with Alisa Larsen on food and Frederik Kolderup from Non Dos and Jens Føien from Vin John. Coffee was brewed to perfection by Supreme Roastworks bearded all-around good guy Magnus Lindskog. That evening was one table setting only. We had a full menu with food and accompanying wine and coffee. The Menu:
-Fatted Calf Tartare from Trond Qvale, truffle -Funnel chanterelle, Norwegian lobster, egg yolk -Redbeets from Korsvold, Lardo from Smalhans -Onion, buckwheat, Valdres cheese -Braised pork belly -Potatoe cream -Burned carrots with herbs -Apple crumble from Hardanger
