And here is my trick (and unhealthy tip) Add more butter on the outside of the sandwich!!! Loads of butter... I mean a huge amount of it! Leave it on the pan in low medium temperature until it is golden. It is easy; add butter on both sides and add cheese on one side and jam on the other (just like a kid making PB&J). As Anders is at an awesome foodies event (#SamsungCookalong) here in Oslo, and i decided last minute to bail out because I am sick, I needed to plan a "home alone" meal. As I have a fever, I don't feel like cooking or looking for a healthy meal. So I decided to make a grilled cheese sandwich, the fancy way... I got my favorite butter from Røros, Chevre from Tine (the only one available, but actually pretty good), Gooseberry jam from Gutta på Haugen (thanks Joachim!) and some baby spinach to match it. Cut in half and enjoy with some baby spinach. I add them just to make sure they neutralize the fat in the cheese and butter. It you like to you can add them inside the grilled sandwich. Enjoy!
